I love to make muffins. They are the perfect size for a quick snack. The kids can quickly grab one from the basket while running off to play outside. 

Add local honey and bananas to your made-from-scratch muffin, and you have a recipe for success! And since my hubby ate four muffins when they cooled down, I'm counting that as a win!

Honey Bread Again: 

I must mention my favorite ingredient, honey! And you've probably noticed it has shown up in most of my recipes because I love that it is healthier.

Honey tends not to affect blood sugar levels as much. But you must learn sugar-to-honey conversations to avoid using too much. Luckily I do that for you in each recipe!

That beautiful golden ingredient also contains more vitamins, minerals, and antioxidants. The antioxidants in honey can feed the beneficial bacteria in our gut—improved gut health has been tied to lower levels of inflammation. 

 

Honey can also be used to soothe a cough and help with allergies. My grandparents could take one spoon full of vinegar and a spoon full of honey daily. It helps to use local honey, which I mention in TIPS. 

 

We will harvest honey from our hives for the first time this year. I can't wait to see what happens when I add the flavors and pureness of our homestead honey. I'm sure it's going to be magical!

 

TIPS for great Warm Spice Banana Honey Bread:

  • Use duck eggs if possible. I love using duck eggs because they have an extra-large yolk. This larger yoke helps baked goods rise higher than a chicken egg will. So, you end up with richer, bigger, and fluffier baked goods! 
    • Find someone locally that sells or will barter for duck eggs. You may even find some at the local farmers market. Start asking around, and you will be surprised how many people you will find! 
  • Use local honey! If you are going to make an effort to use honey as a healthy option, go ahead and add the benefits of honey made from locally gathered pollen. 
    • Local will also help guarantee you get pure honey and not additives that can sneak their way into big commercial brands. It will also help your local beekeeper keep caring for their hives. 
  • Set your butter out ahead of time to make sure it is soft. Or you can place it in the microwave for 10sec. 

 

TOOLS:

  • 8-small loafed pan, you will only use 4 of the loaf sections
  • An electric stand mixer ( You can mix all your ingredients in the electric mixer)

Ingredients for Warm Spice Banana Honey Bread:

Dry:

  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 2/3 cup of brown sugar
  • 2 1/4 cups all-purpose flour 

Wet:

  • 1/2 cup of unsalted butter 
  • 1 1/2 cup mashed bananas, ripe 3med or 2 lrg
  • 1/4 cup of local honey
  • 2 large eggs

Making Warm Spice Banana Honey Bread, HOW TO: 

  1. Preheat oven to 325. 
  2. Add the egg to your mixing bowl, then add the melted butter.
  3. Now add the honey and slice your bananas into the bowl.
  4. Mix all the wet ingredients until the bananas are mixed in well. 
  5. You may have to use your spatula to push the banana slices down, allowing them to mix & mash well into the mixture. 
  6. Take your dry ingredients (except for the flour) and mix them in a small bowl. Put to the side.
  7. Now slowly add, alternating both the dry and wet ingredient bowls to the mixer. 
  8. Slowly add your two cups of flour to the mixer.
  9. Prepare your muffin pans with a bit of melted butter. 
  10. Once all blended, pour the mixture equally into the muffin pan. 
  11. Place the pan inside the stove. Bake at 325 for 35-45 min. 
  12. Check the loaves by inserting a toothpick through the center. If it comes out clean, they are ready.

How to Display Cottage Style:

I can get 12 mini muffins out of this recipe, so I need a basket that can hold all of them. Also, I would have to use both compartments of my bread box. So, a covered round basket is the perfect solution! 

 

I have a basket that is an antique mall shop find that is perfect for these muffins! Because I don't always want to wash my baskets, I use tea towels and wax paper as a barrier between my baked goods and the basket. 

 

The roundness of this basket complements the roundness of the muffins. It makes them feel cozy as they sit protected by the larger circular shape. But, they also need protection as we are now in Spring weather. 

 

Spring temps mean warmer weather, which means we go in and out frequently to work in the garden areas. I love the top lid, which lets them set it on the table on warmer days without worrying about flies trying to land on them.
