Banana Honey Bread

When Banana bread is baking in the oven, you can smell it throughout the whole house. Little feet come running from back rooms, and heads pop around the corner to ask, "Is that banana bread?"

Banana bread is one of the baked goods that will not only fill your belly but put that warm feeling inside your soul on a cold Winter day. Bonus, it's easy to make! 

I make my banana bread in smaller loaves because it is easier for my kids to handle. We have also discovered that the adults in the house eat less with the smaller loaves than we did with the bigger loaves.

As always, I will use duck eggs and local honey in this recipe. Below are some tips for finding them and why I use them. 

TIPS:

  • Use duck eggs if possible. I love using duck eggs because they have an extra-large yolk. This larger yoke helps baked goods rise higher than a chicken egg will. So, you end up with richer, bigger, and fluffier baked goods! 
    • Find someone locally that sells or will barter for duck eggs. You may even find some at the local farmers market. Start asking around, and you will be surprised how many people you will find! 
  • Use local honey! If you are going to make an effort to use honey as a healthy option, go ahead and add the benefits of honey made from locally gathered pollen. 
    • Local will also help guarantee you get pure honey and not additives that can sneak their way into big commercial brands. It will also help your local beekeeper keep caring for their hives. 
  • If using an electric mixer, you may have to use a spatula to push some of the banana pieces into the center to insure they are mixed well.

TOOLS:

  • 8-small loafed pan, you will only use 4 of the loaf sections
  • An electric stand mixer ( You can mix all your ingredients in the electric mixer)

INGREDIENTS:

  • 1/3 Cups of coconut oil or solid coconut 
  • Save a little coconut oil to the side for your pan
  • 3/4 Cup of honey 
  • 2 Sliced bananas
  • 1 large Duck egg or two medium chicken eggs
  • 2 Cups of Flour
  • 1 tsp Baking Powder 
  • 1/2 tsp of Baking Soda 
  • 1 tsp of Salt
  • 3/4 cup of milk
  • 1 tsp Vanilla

How to make Banana Honey Bread: 

  1. Prepare your mini loaf pans with a bit of coconut oil. 
  2. Preheat oven to 350. 
  3. Place coconut oil, honey, and bananas in your mixing bowl. 
  4. Add egg and beat until well blended.
  5. Take your dry ingredients (except for the flour) and mix them in a small bowl. Put to the side.
  6. Combine the wet ingredients and mix them in a small bowl. Put to the side. 
  7. Now slowly add, alternating both the dry and wet ingredient bowls to the mixer. 
  8. Slowly add your two cups of flour to the mixer.
  9. Once all blended, pour the mixture equally into four sections of your mini pan. 
  10. Place the pan inside the stove. Bake at 350 for 30 min. Check the loaves by inserting a toothpick through the center. If it comes out clean, they are ready.

HOW TO DISPLAY BANANA HONEY BREAD COTTAGE CORE STYLE:

No matter what size, Banana bread has, a beautiful rectangular shape easily complemented by rectangular baskets.

I keep smaller rectangular baskets around just for this reason. As I've mentioned in other recipes, they fit nicely in my overnight bread holder.  

You can display several small loaves in a basket or one large loaf in a singular basket.
